Salad of rabbit with smoked sliced bacon Print

Preparation time: 20 minutes

Cooking time: 10-15 minutes 

Ingredients (serves 4 )

2 rabbit fillets

100 g pine-tree pits (roasted)

1 dish of baby corn (fresh)

100 g smoked

sliced bacon 250 g

mixed salad

250 g mixed mushrooms (oyster mushroom, boleten = mushrooms, mushrooms, ...)

50 g butter

For the vinaigrette

1 dl peanut oil

2 tablespoons nut oil

2 shallots

2 tablespoons mayonnaise

½ teaspoon mustard

pepper, salt

1 dl cider

Preparation : Cut the bacon and rabbit fillets in thin slices and bake in hot butter until done. Estimated time: 10 to 15 minutes.

Mix all the ingredients for the vinaigrette with a whisker or mixer. Place the mixed salad on the plates and garnish with the fried smoked, sliced bacon and rabbit fillets. Sprinkle with roasted pine-tree pits.

Cut the baby corn in two and simmer in butter until tender. Sauté the mushrooms in butter. Spread the corn and mushrooms over the salad.

Pour the vinaigrette over the salad and serve.
